(AUSTIN, Texas, Sept. 18, 2025) — Hattie B's Hot Chicken, renowned nationally for its fiery fowl and welcoming hospitality, is turning up the heat on weekends with the launch of its brunch menu. Beginning Saturday, Sept. 27, guests can now enjoy Hattie B’s legendary hot chicken for breakfast during weekend brunch service from 9 a.m. to 2 p.m. on Saturdays and Sundays.
“Our guests kept asking for brunch, so we decided to give the people what they want — just with a little extra heat!,” Hattie B's Executive Chef Brian Morris says.
The brunch menu includes two sugar-dusted, Belgian-style Waffles with whipped butter and syrup ($4) and Chicken + Waffles with the addition of two fried or grilled chicken breasts with your choice of heat or no heat ($9.50).
Brunch also introduces guests to Hattie B’s pillowy, housemade biscuits, available with Hattie B’s juicy fried or grilled chicken breasts. Options include the savory-sweet Salted Honey Glaze ($6), bacon-laced Pimento Cheese ($6.50) and The Ultimate with bacon, fried egg and American Cheese ($8). Biscuits without chicken include Honey Butter ($3.50) and Egg + Cheese ($4).
Guests can customize any chicken order with Hattie B’s signature heat levels — or no heat (Southern style and Sweet & Smoky dry rub) — and Biscuit Add-Ons, including egg or bacon ($1.50), honey butter glaze ($1), American cheese ($1) and pimento cheese ($1.50).
A la carte sides include Tater Tots ($3.50), Bacon-Cheddar Grits ($3.50), Biscuit + Jam ($3) and Beer Cheese Dip ($4 bowl/$2 side) — the ultimate dunk for the Tots, made with Drinking Buddy Golden Ale, Hattie B’s collab beer with Nashville craft brewer Jackalope Brewing Company.
Weekend brunch is not complete without coffee and cocktails, and Hattie B’s brunch menu has both. Pint cocktails ($8.50) include: a classic Painkiller with spiced rum, pineapple, orange and coconut; John Daly with bourbon, tea, citrus and peach; and Watermelon Marg with Blanco, watermelon and citrus. Guests can also choose from nonalcoholic options including Coke products, lemonade, tea, milk and chocolate milk.
Austin is one of four Hattie B's locations to offer breakfast or brunch, including Nashville International Airport in Terminal C and Franklin, Tenn., which both offer a unique breakfast menu. The fast-casual eatery’s Dallas location will also begin serving brunch on Saturday.

With an emphasis on quality, flavor and Southern hospitality, Hattie B's Hot Chicken was founded in Nashville, Tenn., by father-and-son team Nick Bishop, Sr. and Nick Bishop, Jr. in 2012. From bone-in chicken to tenders and a sandwich, heat levels include Mild, Medium, Hot, Damn Hot and the daredevil's dream, "Shut the Cluck Up!," a fiery blend of ghost, habanero and cayenne peppers. No matter the spice level — or no heat at all (Southern and Sweet & Smoky) — the chicken is crispy, juicy and packed with flavor.
Hattie B's first Austin restaurant is at 2529 S. Lamar Blvd., with a second location opening at 3100 Esperanza Crossing, Suite 130, at the Domain NORTHSIDE in Fall 2025.
